Description:Blue berry, a hint of rose in aroma;the cupping notes are cranberry, green plum, fruity smooth mouthfeel;the finish consolidates to aromatic red cherry and smoked plum, carry with molasses sweetness.

🧷El Burro
Plano lot. El Burro is the most-southern coffee farm in Panama. It has a micro-climate found only here, plus it is also partially located inside the biodiverse Baru Volcano National Park, thereby its cup profile is unique. This process was a classic honey process, where the pulp was removed and sun-slow dried in raised beds. Resting for this lot began on the 6th of April, 2023.

🧷The Lamastus Family Estates
The Lamastus Family Estates is a Panamanian coffee company founded in 1918,owns three coffee farm :the Elida Estate coffee, El Burro Estate and Luito Geisha Estate. Elida and El Burro Estate cafes have been consistent winners of many quality awards in international and local competitions. Each farm, because of its location, is very unique due to the microclimates and microorganisms surrounding each coffee plantation.

🧷El Burro Estate
El Burro Estate, one of the southernmost coffee farms in Panama, part of the estate is inside the Baru Volcano National Park (BVNP),being one of the farms closer to the Pacific Ocean.
Coffee in this farm grows starting from 1550masl up to 1800masl, with a mean elevation of 1,675masl.
The coffee from this farm is distinctive for several reasons: first, the farm is located at a very high elevation with rich young volcanic soils, the temperatures are low, it is dry during the dry season (opposed to other coffee estates from the Lamastus Family Estates) and precipitation during wet season is very heavy (average precipitation is 3200mm per year) , and the coffee trees are surrounded by a virgin-native cloudy rain forest. At this location the nights get cold and the low temperatures can extend the ripening time for one month longer, and reflects directly in the ripening of the coffee fruit. All these unique growing conditions, like in Elida, show in a distinguished cup of coffee.

✨Obatã(Hybrid of Timor) , A high yielding rust-resistant variety from Brazil, it was bred in São Paulo, Brazil by Timor Hybrid and Villa Saarchi, announced by Brazil in 2000, and introduced to Costa Rica by the Costa Rica Coffee Association in 2014.

Process: Induced Fermentation
Lot passed by a semi-aerobic fermentation in barrels for 4 days using yeasts naturally occurring at the farm. Drying took place in raised beds for 32 days until the lot achieved the proper moisture to storage.

🧷How the Coffee was selected
Lots were categorized and pre-select by 4 Q-graders and 2 COE judges. Then, the lots were examined by a national jury composed of 5 experienced cuppers from Brazil. Finally, the qualified lots were submitted to 20 international judges for the final ranking.

Cup of Excellence(COE)
The annual Cup of Excellence competition (COE) organized by the Alliance for Coffee Excellence (ACE) constantly held throughout the worldwide.
COE program is designed to allow any farmer in the country to submit sample without any fee. Then ACE manages the sampling and evaluation choosing the most elite coffee from the country. Finally, with the complete system and networking of the ACE online bidding platform. These high-quality coffees will be auctioned-off subsequently.

Each COE consists of total of 6 rounds cupping. 

Pre-Selection: 
Round 1, Every sample is cupped once by the National Jury. All samples that score 86+ advance to the next stage (maximum 150 samples).

National Jury: 
Chooses top 90 samples in round 2, scoring 86+. Then up to a max of 40's remain in the competition in round 3, each score 86+.ogress to the online auction. Round 6, top ten highest-scoring samples are cupped one final time to give them special attention and determine the final score and ranking.

Acidity explanation:
When customers ask us to recommend beans, the number one question is about flavor, and the number two is “Is this acidic?”

First of all, the feeling of the acidity varies from person to person. Once I met two guests. A said he would like to drink acid coffee, while B said he would not drink acid coffee. So I made a Natural Yirgacheffe Blue Donkey for them. A said that it was too acidic, and B said that it was okay. It is clear that there are individual differences in the sensitivity of acidity.

Since there are individual differences, is there any criterion for reference?
We generally use several fruits to make the evaluation from the least acidic to the most acidic. From 1~5 is strawberry jam, grapes, apples, oranges, lemons. So that the scores of relative acidity can help the consumers with a reference in purchasing.
