Notes: Ethiopia coffees like this one are largely produced from distinctive indigenous Ethiopian varieties of Arabica long grown in their respective regions. Processed by the wet or washed method, in which skin and fruit flesh are removed from the beans or seeds before they are dried. Blind assessment: Crisp, citrusy, deeply sweet. Lemon verbena, cocoa nib, agave syrup, cedar, freesia in aroma and cup. Sweet-tart structure with high-toned, lively acidity; full, viscous mouthfeel. The finish consolidates to notes of citrus-toned cocoa and freesia.

The bottom line: An integrated, citrus-inflected washed Ethiopia cup with a cocoa throughline and spicy floral notes, particularly in the aroma.
